Jan 2016 WLC: Week 2

At-home workout: Death by Burpees

If last week was slow and sedate, this one’s more of a burner. The premise is simple: do 1 burpee the first minute, 2 burpees the second minute, 3 burpees the third minute, and so on, until you can no longer complete the required number of burpees within 60 seconds.

Good luck and have fun!

Recipe: Slow-cooker barbacoa beef

Whether you’re feeding a crowd, or making extra to freeze, this barbacoa beef recipe is worth adding in your repertoire. Works equally well in tacos, burrito bowls, and with eggs!

Suggestion: I never make it with the teaspoon of cloves called for in the recipe. Clove can be a strong flavor, and we’ve definitely never missed it!

Weekly Read: No Food is Healthy. Not Even Kale.”

I submit to you that our beloved kale salads are not “healthy.” And we are confusing ourselves by believing that they are. They are not healthy; they are nutritious. They may be delicious when prepared well, and the kale itself, while in the ground, may have been a healthy crop. But the kale on your plate is not healthy, and to describe it as such obscures what is most important about that kale salad: that it’s packed with nutrients your body needs. But this is not strictly about nomenclature. If all you ate was kale, you would become sick. Nomenclature rather shows us where to begin.
