Quick & Easy Beef Curry

Quick & Easy Beef Curry
1 T. olive oil
1 onion diced or sliced (slices work fine if you are feeling lazy)
1/2 cup golden raisins
2 T. curry powder (more or less depending on how you feel)
1 lb ground beef
1 bag fresh spinach (or any green thing you want)
1/2 cup- 1 cup of sour cream, yogurt, or coconut milk
salt and pepper

rice (optional)

How to prepare:

Heat the oil in a pan over medium heat. Saute the onion and raisins until the raisins are plump and the onions are starting to caramelize, 5-10 minutes.
Add the curry powder and cook until fragrant, 30 sec. Then add the beef and cook, stirring occasionally, until beef is fully cooked and browned.
Add the sour cream/yogurt/coconut milk and stir to combine (less will make it thicker.. more is nice if serving with rice). Add in spinach (or other green thing) and stir until wilted.
Remove from heat. Adjust salt and pepper to taste. Add any additional sour cream/yogurt/coconut milk or curry powder to taste, as well.
