One-pan meal: Chicken Thighs with Chorizo and Sweet Potatoes

Looking for an easy weeknight meal that doesn’t take much time or effort?

Thanks to my dear friend, Catherine, for sending along Nigella Lawson’s recipe for Spanish Chicken with Chorizo and Potatoes. All it takes is a few minutes of slicing and dicing, and you’re good to go! You can easily make it WLC or paleo-challenge friendly by substituting sweet potatoes or yams in equal quantities for the potatoes. Plus, it’s easily scaled up (or down) depending on appetites and how many people you are feeding.

Depending on what kind of chorizo you are using and your taste preferences, I would add about 1/2-1 t. of salt additional to the recipe. Enjoy!
