One of our athletes participating in the WLC was kind enough to share the following recipe, complete with some pictures of delicious looking chicken. Dustin says, “If you are sick and tired of “chicken as usual” you must try this out”:
Kick-Ass Chicken Cacciatore
- 4 chicken thighs (bone-in, skin-on)
- 24 oz of diced tomatoes
- 1 yellow onion, chopped
- 1 red pepper, chopped
- 2 cloves of minced garlic
- chicken broth
- salt and pepper to taste
- olive oil
- Heat some olive oil in a large skillet. Season your chicken with salt and pepper and cook in the skillet until nice and brown and crispy on each side (probably 5-7 minutes). Remove the chicken from the skillet and set aside.
- Throw in the onion and red pepper and cook until onions are “translucent.” Add the garlic and cook for another minute. Add salt and pepper. Add the diced tomatoes and their juices. Cook for a couple of minutes more. Add the chicken back into the skillet with the mix and let cook on medium heat for 20 minutes. Add extra chicken broth if the tomatoes, onions, red pepper and their juices do not cover the chicken.
