Holy heat wave. The east coast is channeling the surface of the sun and all I want to do is sit on the couch and cat nap. Thankfully, this berry concoction is ice cold, delicious, and requires minimal effort. Enjoy!
Berry Chocolate “Ice Cream”
- 2 heaping cups frozen berries
- 1 c. full-fat coconut milk
- 2 T. cocoa powder (I highly recommend Trader Joe’s tumaco cocoa powder)
- Handful of walnut pieces, raw or toasted
Toss berries, coconut milk, and cocoa powder into a blender. Blend, blend, blend. This will be really thick, so you will have to scrape it down the sides a few times and mix it with a spoon to make sure it all blends together. (Add some water if you want it thinner).
Scoop into a bowl and top with walnuts. Chocolate shavings would also be tasty.
