There is no ice cream, no caramel topping, no whipped cream, and definitely no artificially-colored, sugar-infused cherry on top. Somehow, we took to calling this a “sundae” and it stuck. It is stupid easy and crazy delicious. I never measure any of this, so I’m just making up numbers in the recipe below for those of you who might prefer stricter guidelines. Aside: I used to prefer VERY explicit recipes, but then I realized (slowly…) that it is food, it is tasty, and nothing goes wrong when you make changes based on what you like and what you have on hand.
Paleo “Sundae” (for 1)
- 3-4 T. Coconut flakes, unsweetened
- 1-2 T. raisins
- generous 1 T. almond butter
- 1/2 to 1 t. cocoa powder
Layer coconut, almond butter, cocoa powder, and raisins. Nom away.
And something interesting I found while googling, if you are in Korea, and someone says let’s go for sundaes, they probably don’t mean delicious ice cream treats….
